My family is a big fan of the Pioneer Woman and her family friendly meals. However, she is not exactly known for low fat , low calories meals! She is not afraid to throw in some hearty ingredients in addition to some captain crunch now and then(yes, you read that right!). Ree does have some healthy recipes and today I rounded up 5 of my favorite Healthy Pioneer Woman Recipes that will not disappoint!
Healthy Pioneer Woman Recipes
Italian Chicken Sheet Pan Supper – This recipe is so easy and was a hit with my family. I use the marinade every week now for my chicken even when I’m not making this sheet pan dinner. The recipe calls for green beans, but you could substitute other veggies like snap peas, snow peas or broccoli. I made it with broccoli before and it’s fantastic.
Honey Soy Salmon – I’m trying to incorporate salmon into our diet if not weekly , twice a month. It’s a super food that is packed with Omega 3’s and tons of protein! 17 g per 3 oz!! It’s a must for our diet. The mix of honey and soy in this recipe is delicious. It’s one of my favorite marinade combos. You can pair this with rice and veggies or you can put the salmon over greens for a lighter meal.
Chicken Florentine Pasta – I love a good pasta dish that has chicken and veggies as it is a nice change from the traditional spaghetti and meatballs. I’m always looking for healthy pasta dishes because they are just easy and typically the whole family likes them. This dish has protein and veggies which is so important for a healthy and fulfilling meal. I will also use whole grain pasta instead of regular pasta to give it some added fiber.
Grilled Chicken Strawberry Salad Wrap – Doesn’t this wrap look so yummy? You can have this dish as a wrap or just have it as a plain salad if you want to cut out the carbs. You can of course substitute feta cheese or bleu cheese if you don’t like goat cheese.
Shrimp and Tomato Sheet Pan Supper – This recipe is sooo simple and healthy!! Perfect for a quick dinner. Serve it alongside a salad, over rice with a side of veggies or with pasta. Lots of possibilities with this tasty meal.
Pinterest is my go to for recipes, but this year my son bought me a Pioneer Woman Cookbook and I use it all the time! I was surprised at how much I liked having a cookbook to open again. Something about pulling out a cookbook with pretty pictures made cooking fun! My kids get into it too by searching through the cookbook and picking out what they want for dinner. I noted a few of her most popular books below.
